Tasting Notes: Green Apple, Grape, Almond, Honey
Description: This microlot offering comes to us from the sub-region of Chalatenango, located
on the Alotepec-Metapán mountain range in El Salvador. The soil along this range is mineral
rich volcanic soil, perfect for growing coffee. Producer Orlando Aguilar oversees the harvest at
Finca Buena Vista, which is done entirely by hand, selecting only fully ripe cherries for
processing. Once picked, the coffee is fermented, depulped, washed, and dried on raised beds
and patios for an average of 10-13 days.
